However, it is recommended that novice cooks start with a simple recipe - making healthy and tasty feta cheese.

Brynza cheese is distinguished by its delicate taste and at the same time is a valuable source of protein. To prepare a homemade product, you will need only a few basic ingredients:

• milk - 3 liters;
• water - 50 ml;
• sourdough (enzyme) - 0.05 grams;
• salt - to taste.

By default, feta cheese is made from goat milk, which has a specific taste and pronounced smell. The traditional recipe involves the use of sheep’s milk brine. However, the simplest and most affordable option is to make it from cow's milk, which can be used both at home and pasteurized production. In the latter case, it is additionally necessary to add calcium chloride, which contributes to better coagulability of milk.

Cheese technology

The enzyme in the form of a powder must be dissolved in warm boiled water, the temperature of which should not exceed 25 ° C. Next, pour milk into the pan and heat to 30-35 ° C, stirring occasionally so as not to burn. You can check the temperature using a special kitchen thermometer. When the milk is heated, you need to add the yeast, mix thoroughly and leave for 30-40 minutes to thicken.
When a cheese clot has formed, the milk mixture must be gently mixed, and then transferred to a prepared colander, placed in a deep pan and covered with one layer of gauze. Leave in this condition for about half an hour. After this, you need to mix the mass again, if necessary, cut it with a knife, so that all the glass serum is in the pan, and leave for another 20-30 minutes.

The cheese mass, without shifting from gauze, must be formed into a small bowl, which is desirable to hold for 6 hours under oppression. In hot weather, it is recommended to "compress" homemade cheese in a cool place so that the cheese is not sour. At the last stage of cooking, you need to cut the finished product into pieces, salt and refrigerate for a day.
